Loya, roughly translating to ‘gathering for a feast’, is a word associated with the joy of communal dining. It draws its name from a tribal shepherd practice—a meeting of travellers who cook and dine together after a long journey. Loya Mumbai aims to recreate this sense of community, offering a menu grounded in regional authenticity and preserved cooking techniques.
Loya’s menu reads like a map of the north, spanning Punjab, Uttarakhand, Delhi, and the Himalayan foothills. Ingredients are locally sourced, and methods such as dhungar (smoking), baghar (tempering spices in hot oil), and slow-cooking over a sigdi (coal stove) form the core of its culinary approach. The offerings are structured in courses—beginning with ‘Pella Swad’, which features dishes like Maash Ki Tikki and Dal Ki Chaat, and moving to ‘Loya Ki Khaas’ and ‘Sanjha Swad’, where items like Kangra Khodiya Gosht and Kala Moti Gucchi Pulao highlight seasonal and lesser-known ingredients. Some dishes exclusive to Mumbai’s Loya are Kebabi, Kafuli Saag, Jwala Macchi and a variety of breads like Malera Roti, Tikkad ki Missi Roti and Gola Paratha. The hearty meal ends with a personalised mukhwas, offering patrons a chance to create their own unique blend of khajoor supari (dates and betel nut), fresh paan, zesty ginger chips, and a touch of misri (sugar).
The number five is significant in Indian tradition, symbolising the five senses, rivers, and elements. Loya’s drinks menu and cocktail philosophy, too, are based on the five principles of harmony, experimentation, authenticity, reverence, and spirit. The cocktail program pairs harmoniously with their culinary offerings, showcasing the potential of infusions and ingredients that are unique to the restaurant. The drinks menu includes concoctions like Mulethi, with a hint of citrus, Gulab, a rose-cardamom concoction paired with pineapple juice and a citrus-rose mist, among others.
Expressing their admiration for the North of the country, the design elements borrow visual cues from the northern landscape. Grand arches, Himalayan-inspired water features, and logwood furnishings contrast with elements like a cascading waterfall at the bar. Ambient music draws from folk traditions, further anchoring the space in its cultural context. A unique feature in this outpost is an extended verandah that allows for an all-day food and beverage experience.
Since the inception of Loya in 2022 at the Taj Palace New Delhi, it has continued to explore the intersection of tradition and innovation. In both Delhi and Taj West End, Bengaluru, too, the thoughtful design philosophy that honours North Indian richness is the soul of the restaurant. It is reflected through the decor, colorful uniforms and table settings. The team brings personal family stories and culinary memories into the kitchen, ensuring the food is more than a replication—it’s a continuation of the legacy.
